Zoodles and Meatballs with Thai Cashew Sauce (Paleo/Keto/Whole30)

This recipe is a play on spaghetti and meatballs, both from the perspective of diet and flavor. At this point, most people know what zoodles are -- spiralized zucchini that can function like spaghetti in a wide variety of recipes. Originally, I had been going for a kind of pad thai with this recipe and intended only to replace the peanuts with cashews. When I realized that I didn't actually have any of the ingredients for pad thai (namely, tamarind), I decided to go for something different. The sauce in this recipe can be as creamy as you'd like, based on how much water you add. I prefer none. The coconut aminos and fish sauce give it a distinct Thai flavor, while the lime provides some much needed acidity. I prefer the sauce with a little sweetness, but use the sweetener of your choice to taste.

Zoodles
 3 zucchinis, spiralized
 1 tsp salt
Thai meatballs
 1 lb ground beef
 ¼ cup coconut aminos
 4 cloves of garlic, chopped
 ½ inch of ginger, minced
 2 tbsp fish sauce
 1 tsp sesame oil
Thai cashew sauce
  cup cashews (ideally soaked)
 ¼ cup avocado oil
 1 tsp coconut sugar OR a few drops of stevia, to taste (coconut sugar will make this NOT keto)
 2 cloves of garlic
 1 inch of ginger
 3 tbsp coconut aminos
 1 tsp fish sauce
 1 tsp sesame oil
 2 limes, juiced
 cilantro, to taste
 Thai basil, to taste

Preparation

Preheat the oven to 400 degrees Fahrenheit.

Spiralize your zucchini and salt. Let sit in a collander to dry out.

Meatballs

Put ground beef into a mixing bowl with chopped garlic, coconut aminos, fish sauce, ginger, and sesame oil and let marinate while the oven preheats.

After the oven has heated up, shape into balls.

Bake for 20 min.

Cashew sauce

Put all of the ingredients into a food processor, except for the herbs.

Grind until smooth.

Add in the herbs to taste.

The final product

Combine sauce with zoodles and add meatballs. Enjoy!
