Sabich Salad (Paleo/Keto/Whole30/Vegetarian)

I recently married an Israeli man in Israel. Politics aside, Israel is one of the most beautiful countries in the world -- and has some of the most delicious food. Sabich, a signature Israeli dish, is typically composed of roasted eggplant, hard boiled egg, and potato and put in a pita sandwich. When my husband requested that I may it for him the day after we returned from our wedding, I knew that I needed to "healthify" it. This recipe is the result. It's delicious, filling, and nutritious!

Eggplant
 1 large eggplant (make sure that it's light when you pick it up)
 1 tbsp salt
 1 tbsp cumin
 1 tbsp garlic powder
 2 tbsp olive oil
Cauliflower (in lieu of potato, although you can also use sweet potato or butternut squash if you're not watching your carbs)
 1 medium-sized cauliflower
 1 tbsp olive oil
 1 tbsp salt
 1 tbsp garlic powder
Salad base
 3 kumato tomatoes
 1 red onion
 3 Persian cucumbers
 1 bell pepper
 1 kohlrabi
 3 tbsp fresh chopped parsley
 3 tbsp fresh chopped mint
 1 tbsp olive oil
 1 lemon, squeezed
Garnishes
 goat cheese (if you're not restricting dairy)
 harissa (if you like spice)
 tahini (this one's not optional)
 pistachios (for some crunch)
 4 hard boiled eggs

Salad base

Dice all of the vegetables and mix in a bowl.

Dress with lemon, olive oil, and salt to taste.

Eggplant and cauliflower (or root vegetable of your choice)

Cut into strips like french fries.

Add seasonings and oil.

Bake on 450 degrees Fahrenheit for 45 minutes.

Place on top of salad base.

Garnish with dressings of your choice, including one hard boiled egg per bowl.
