Keto / Paleo – Vegan Nut Butter Slaw

This slaw is probably one of my favorite recipes using nut butter. It's creamy, a bit sweet, and full of flavor. And one of the best parts - it's also vegan, meaning that my sister can enjoy it too :). I like to serve it as a side salad with an animal protein on top, but it's hearty enough to be a main dish, with some full nuts thrown in for crunch.

Prep Time10 mins

Dressing
 4 tbsp Nut butter
 1 tsp Sesame oil
 1 tbsp Fresh grated ginger (1 tbsp powdered if you don't have fresh)
 ¼ cup Rice vinegar
 ¼ cup Coconut aminos
 ½ Orange -- Juiced
Slaw
 1 Bag of Trader Joe's Brocoli slaw
 2 Persian Cucumber, julienned
 3 Carrots, grated

I prefer to make my own nut butter. I do this by throwing the nut of choice into a blender and blending until smooth. If the mixture has trouble, add a little bit of a neutral tasting oil, such as avocado (unless you're intentionally going for a certain flavor profile)

Add nut butter into food processor with other ingredients and blend until consistency is smooth and even.

Mix slaw ingredients together and pour dressing on top.
