Carrot and parsnip latkes

 4 medium-sized carrots (I use the Trader Joe's rainbow carrots as a metric)
 2 large parsnips
 1 egg
 2 tbsp almond flour
 2 tbsp oil of choice
 ½ tsp garlic powder
 ½ tsp onion salt (Trader Joe's)

Grate carrots and parsnips and mix together in a bowl.

Add garlic powder, onion salt, and almond flour and mix well.

Crack the egg and mix into grated vegetables.

Ladle batter into a pan and cook for about 5 minutes on each side, until browned.
